2 1/2 cups sugar
1/2 cup water
1/2 cup light corn syrup (vit sirup)
2 egg whites
1 tsp vanilla
1 or 2 drops food coloring (optional)
1/2 cup chopped candied fruits or nuts
In a heavy 2 quart saucepan mix sugar, corn syrup and water. Cook and stir over medium-high heat till boiling. Cook over medium heat without stirring until hard crack stage (when you drop a bit in cold water, it should turn into hard strands. This takes about 20 minutes).
In a large mixing bowl, beat the egg whites on medium until stiff peaks form. Slowly pour the hot mixture into the egg whites, beating continually for three minutes. Scrape the sides and add the vanilla and food coloring. Continue beating on high until the candy starts to lose it's gloss. When beaters are lifted, mixture should fall in a ribbon that mounds on itself. The final beating will take about 6 minutes.
Drop a spoonful of mixture onto waxed paper. If it stays mounded it has been beaten enough. Immediatly fold in fruit or nuts. Quickly drop remaining mixture from a teaspoon onto waxed paper. If the mixture flattens out, beat 1 minute more then check again. If mixture is too stiff to spoon, beat in a few drops of very hot water till candy is of a softer consistency. Store tightly covered. Makes about 40 pieces.
