Low-cal Pumpkin Parfait

(easy and elegant)

Pumkin mixture:
Mix: 1 cup pumpkin puree
2 cups low-fat milk
1 1.5 oz box sugar-free vanilla pudding
3/4 tsp pumpkin pie spice
(I like to add a couple of tablespoons of Splenda, a sugar substitute, but this is optional)

Layer into clear glasses or clear plastic tumblers:
Pumkin mixture
Graham cracker crumbs (I use just a few to make a very thin layer)
Lite cool whip
Pumkin mixture
Graham cracker crumbs
Lite cool whip
Top with a few sliced almonds.

Serves 4 or 5
