Depends on lots of things...if the riders have any armor (we are talking fantasy books here *s*), the shape the horse is in, the terrain on which you're travelling. But I would think they could cover 40 miles or so, maybe more. I'm not into endurance riding though, so I could be off. But the horses have to be trained for that sort of use...I couldn't just jump on Sevi (my horse) and expect her to cover 40 miles.

I always like it when the characters mention that they had to rest or walk the horses in between bouts of quicker movement.
